Passatelli

Ingredients:

  • 1 cup grated cheese
  • 2 cups breadcrumbs
  • Nutmeg and grated lemon rind
  • Eggs q.s. Dough solid

Mix all ingredients well and let stand for a couple of hours. With the appropriate tool, pass the mixture directly into the boiling broth, cutting passatelli to a length of about 4 cm.
